Old Fashion Lima Bean Casserole
- 1 (20 oz.) pkg. frozen lima beans
- 1 large red onion, chopped
- 1 red pepper, chopped
- 4 green onions, sliced
- 1 can cream of mushroom soup
- 1/2 c. water and liquid from beans
- 1 c. sour cream
- 1 1/2 Tbsp. Dijon mustard
- 1 tsp. salt
- dash of black pepper
- 2 Tbsp. seasoned bread crumbs
- 4 strips bacon, cooked and crumbled
- Cook beans according to instructions.
- Drain; reserve liquid. In saucepan combine onion, pepper and green onion.
- Mix soup, liquid from beans and water (liquid and water should be 1/2 cup). Pour soup mixture over vegetables in saucepan.
- Heat stirring. Blend sour cream, mustard, salt and pepper.
- Stir into mushroom soup mixture.
- Add cooked lima beans.
- Pour mixture into 6-cup casserole.
- Sprinkle with crumbled bacon and bread crumbs.
- Bake at 350u0b0 for about 30 minutes or until lightly browned.
