Baked Macaroni And Cheese Casserole
- 1 1/2 c. uncooked elbow macaroni
- 1/4 c. margarine
- 1 small onion, chopped
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 c. flour
- 1 3/4 c. milk
- 10 oz. Velveeta cheese, cut into 1/2-inch cubes
- Have macaroni cooking while preparing cheese sauce.
- Cook and stir margarine, onion, salt and pepper in a 3-quart pot until onion is slightly tender.
- Blend in flour, cook over low heat, stirring constantly, until mixture is smooth and bubbly.
- Stir in milk; heat to boiling, stirring constantly.
- Boil and stir 1 minute; remove from heat.
- Stir in cheese until melted.
- Add cooked macaroni. Stir well.
- Place in 2-quart casserole.
- Cook, uncovered, in 375u0b0 oven for 30 minutes.
- Should be slightly brown.
- It's fun to slice up about 5 hot dogs and add to casserole before baking.
