Pork Tenderloin Medallions
- 2 lb. tenderloins
- 1/4 c. flour
- 1 1/2 Tbsp. lemon pepper
- 3 Tbsp. margarine
- 1 large can peeled tomatoes
- 1/3 c. brown sugar
- 1/2 tsp. ginger
- 1 1/2 Tbsp. Worcestershire sauce
- 1/2 tsp. garlic powder
- 1/2 c. onion, finely chopped
- 1/8 tsp. nutmeg
- 1 Tbsp. Italian seasoning
- Mix flour and lemon pepper.
- Roll pork in this and brown in butter.
- Remove to a platter.
- Combine remaining ingredients in skillet.
- Bring to a boil to melt sugar and break up tomatoes. Return pork to skillet, lower heat and cover and simmer 30 to 45 minutes.
- Remove pork to platter.
- Cool 15 minutes.
- Slice 3/8-inch thick pieces.
- Continue cooking sauce until thickened.
- Serve with yellow rice.
