Pork Tenderloin Medallions

  1. Mix flour and lemon pepper.
  2. Roll pork in this and brown in butter.
  3. Remove to a platter.
  4. Combine remaining ingredients in skillet.
  5. Bring to a boil to melt sugar and break up tomatoes. Return pork to skillet, lower heat and cover and simmer 30 to 45 minutes.
  6. Remove pork to platter.
  7. Cool 15 minutes.
  8. Slice 3/8-inch thick pieces.
  9. Continue cooking sauce until thickened.
  10. Serve with yellow rice.
