New Year New You Healthy Vegetable Soup

  1. Saute onion and garlic in large stock pot at medium heat until translucent.
  2. Add celery, carrots and bell pepper and saute 2 minutes more.
  3. Add all remaining ingredients and bring to a low boil.
  4. Once boiling, reduce to simmer and continue cooking for 90 minutes to develop flavors.
  5. Enjoy as is for a non-meat meal. Or add cooked chicken to make a heartier meal.
