Prince Of Wales Cake(Dates From 1860'S)

  1. Beat 6 eggs very lightly and add them to 1/2 pound of butter. Work until light.
  2. Beat all together until light and gradually put in 1 pound of flour containing 2 teaspoons of baking powder and 1 cup water.
  3. Stir into the batter one teaspoon each of the ground cinnamon, allspice, cloves and nutmeg.
  4. Cut into small pieces the 1/2 pound of citron and 1 pound of seedless raisins.
  5. Wash and dry one pound currants.
  6. Stir into the batter and bake in a quicker oven than necessary for other cakes, covering the top to prevent burning.
  7. Bake until done.
