Prince Of Wales Cake(Dates From 1860'S)
- 6 eggs
- 1/2 lb. butter
- 1 lb. flour
- 2 tsp. baking powder
- 1 c. cold water
- 1 tsp. cinnamon (ground)
- 1 tsp. allspice (ground)
- 1 tsp. cloves (ground)
- 1 tsp. nutmeg (ground)
- 1 lb. seeded raisins
- 1 lb. currants
- 1 c. sugar
- 1/2 lb. citron
- Beat 6 eggs very lightly and add them to 1/2 pound of butter. Work until light.
- Beat all together until light and gradually put in 1 pound of flour containing 2 teaspoons of baking powder and 1 cup water.
- Stir into the batter one teaspoon each of the ground cinnamon, allspice, cloves and nutmeg.
- Cut into small pieces the 1/2 pound of citron and 1 pound of seedless raisins.
- Wash and dry one pound currants.
- Stir into the batter and bake in a quicker oven than necessary for other cakes, covering the top to prevent burning.
- Bake until done.
