Habanero Apple Mac And Cheese
- 1/2 cup butter
- 1/2 cup flour
- 1 1/2 cups milk
- 1/2 cup shredded habanero cheese (pepperjack can substitute)
- 1 cup shredded cheddar cheese or 1 cup colby-monterey jack cheese
- 1 -2 cup crushed kettle chips
- pasta, of your choosing I recommend large shells
- 2 apples, diced
- 2 slices bacon (optional)
- cajun seasoning
- Melt butter in medium sized saucepan over low-medium heat.
- Once butter is melted, combine flour and stir until well incorporated. About 1-2 minutes.
- Add milk and wait 3-4 minutes for the sauce to warm through.
- Add 1/2 of the cheese and stir for 2-3 minutes.
- Add remainder of cheese and stir 2-3 additional minutes.
- At this point, the cheese sauce should be melted and creamy. If not, keep it over low-medium heat and stir occasionally. Add any additional milk as needed to adjust for desired consistency.
- Cook pasta according to package, drain and place in 10 inch cast iron skillet.
- If using peppered bacon, it should be ready at this point. Chop it and mix it with cheese sauce.
- Mix chopped apples in with pasta and pour cheese sauce over, gradually mixing as you pour.
- Crumble Kettle brand Fresh Ground Pepper Kettle Chips over the dish and place under broiler on high until they begin to brown.
- Serve and enjoy!
