Cheesy Potato Surprise
- 6 medium potatoes
- 1 tsp. vegetable oil
- 3 Tbsp. Italian bread crumbs
- 1 Tbsp. olive oil
- 1/2 c. 2% milk
- 1 egg
- 1 Tbsp. tomato paste
- 2 large garlic cloves, minced
- 1/2 c. Parmesan
- 1/2 c. grated Mozzarella or Cheddar cheese
- 1/2 c. or to taste extra bread crumbs
- Cut potatoes into chunks and boil until tender.
- Preheat oven to 350u0b0.
- Take 1 teaspoon oil and oil 9 x 12 x 1-inch pan. Sprinkle pan with bread crumbs.
- Drain potatoes and in large bowl add olive oil and mash potatoes.
- Add milk, egg, tomato paste and garlic.
- Stir in cheese.
- Place in 9 x 12 x 1-inch (or so) pan, making it as level as possible.
- Sprinkle extra bread crumbs across top to make crust.
- Bake 40 minutes.
- Cool 15.
- This is an excellent variation of mashed potatoes.
