Old-Fashioned Chocolate Gingerbread

  1. Preheat oven to 325u0b0.
  2. Butter a 10 x 12 baking pan and dust it with fine bread crumbs.
  3. Shake out excess crumbs.
  4. Sift the flour, baking soda, salt, ginger, cinnamon and allspice together.
  5. Melt chocolate.
  6. Let cool until warm.
  7. Mix butter and hot coffee until butter is completely melted.
  8. Mix in brown sugar.
  9. Mix in molasses. Beat in the eggs.
  10. Pour in the chocolate and mix well.
  11. Beat in the dry ingredients lightly.
  12. Stir in the candied ginger.
  13. The mixture should be fairly thin.
  14. Pour the mixture into the pan, making sure it is level.
  15. Bake for 50 minutes.
  16. Let cool for 20 minutes. Invert onto a cookie sheet.
  17. Then invert onto serving plate and let cool before serving.
  18. Makes two dozen squares.
