Sausage Enchiladas
- 1 lb. Owens sausage (breakfast)
- 1 small onion, diced
- 1 large plus 1 small pkg. cream cheese, softened
- 1 can Ro-Tel tomatoes with green chilies
- 12 to 18 flour tortillas
- 1 can refried beans
- 5 c. grated Monterey Jack cheese
- 1 Tbsp. chili powder (season to taste)
- 1 tsp. garlic (season to taste)
- Brown sausage and onion in skillet.
- Pour over cream cheese in bowl.
- Mix until cream cheese is blended.
- Add Ro-Tel tomatoes and mix well.
- Spread tortillas with thin layer of refried beans, then place 1/4 cup meat mixture in center with a pinch of cheese and roll up.
- Place in greased casserole.
- Top with cheese.
- Bake at 350u0b0 for about 20 minutes or until cheese melts.
- Serves 6 to 8.
