Vegetable Clam Chowder
- 1/4 c. finely chopped bacon
- 1/4 c. chopped onion
- 1 can minced clams
- 1 c. water
- 1 (16 oz.) can whole tomatoes
- 1 (8 oz.) can tomato sauce
- 2 c. chopped potatoes
- 2 c. chopped carrots
- 1/3 c. chopped celery
- 1 Tbsp. parsley flakes
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/4 tsp. thyme
- 1/2 c. frozen peas
- 1/2 c. frozen corn
- Saute bacon and onion until bacon is crisp and onion is tender.
- Drain clams, reserving liquid.
- Add clam liquid, water, tomatoes and tomato sauce to onion and bacon.
- Add potatoes, carrots, celery and seasonings.
- Simmer on low heat until potatoes and carrots are tender.
- Add clams, peas and corn.
- Heat to boiling.
- Serves 4.
