Cheesy Fiesta Casserole

  1. Saute sausage, mushrooms and onion in a large skillet until sausage is completely cooked.
  2. Drain well; set aside.
  3. Combine eggs and sour cream in a blender; season with salt and pepper. Whip eggs for 1 minute.
  4. Pour into greased 9 x 13-inch baking dish.
  5. Bake at 400u0b0 until eggs are softly set, 5 to 8 minutes. Spoon salsa evenly over the top of eggs, then spread sausage mixture over the top.
  6. Top with combined cheeses.
  7. Cover; refrigerate until 30 minutes before serving time.
  8. Bake at 325u0b0 until cheeses are melted, about 30 minutes.
