Talagrini Primavera
- 1/2 lb. asparagus
- 1/4 c. slivered ham or prosciutto
- 1/4 c. butter or margarine
- 1 thinly sliced carrot
- 1 diced zucchini
- 3 sliced green onions
- 1/2 c. thawed frozen green peas
- 1 tsp. basil
- 1/2 tsp. salt
- dash ground nutmeg
- dash pepper
- 1 c. half and half
- 1/4 c. freshly grated parmesan cheese
- 1 pkg. noodles
- In a large pan, boil water and cook noodles.
- Diagonally cut asparagus into 1 inch lengths.
- In a wide frying pan over medium heat melt butter.
- Add the ham, asparagus, carrot and zucchini. Cook the mixture, stirring occasionally, for 3 minutes without a lid.
- After that cover the pan and cook for 1 minute longer.
- Now add the green onions, peas, basil, salt, nutmeg, pepper and half and half to the mixture.
- Increase the heat to high and cook until the liquid begins to boil.
- Mix with noodles and top with parmesan cheese.
- Makes 3 to 5 servings.
