Carrot Salad That You Can'T Stop Eatting
- 7 organic carrots, 5 cups grated
- 30 g pecans, broken
- 30 g walnuts, broken
- 30 g mixed dried fruit and sunflower seeds
- 20 g unsweetened flaked coconut
- 1/2 cup minced parsley
- 1/4 cup sliced celery
- 3 tablespoons raw coconut vinegar
- 3 tablespoons coconut oil
- 6 tablespoons raspberry chipotle jam
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon black pepper
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 garlic clove, minced
- 20 g fresh ginger, minced
- Mix first 7 ingredients and place in a bowl.
- Mix remaining ingredients together adjust seasoning to taste. Toss onto salad.
- Chill or serve immediately.
