Pecan Pie Squares
- 2 c. flour, sifted
- 1/4 c. sugar
- 1/2 tsp. salt
- 1 stick oleo, melted
- 3 eggs, beaten
- 1 c. sugar
- 1 c. light corn syrup
- 2 Tbsp. oleo, melted
- 1 tsp. vanilla
- 2 c. pecans, chopped
- Preheat oven to 350u0b0. Grease a 13 x 9 x 2-inch pan. Combine flour, 1/4 cup sugar, salt and 1 stick oleo; blend with an electric mixer on medium speed until mixture resembles corn meal. Press crust mixture firmly and evenly into prepared baking pan. Bake for 20 minutes or until lightly golden brown. Combine rest of ingredients in mixing bowl in order listed, blending well after each addition. Pour filling over baked crust; return to oven. Bake for 25 to 28 minutes or until filling is set. Cool completely on wire rack before cutting into 2-inch squares. Makes 24 squares. Tastes like individual pecan pies.
