Polish Chruseiki
- 4 eggs
- 6 Tbsp. granulated sugar
- 1/2 tsp. salt
- 3 Tbsp. rum or vodka (optional)
- 3 1/2 c. all-purpose flour
- 1 tsp. baking powder
- 16 Tbsp. butter (room temperature)
- vegetable oil
- confectioners sugar
- Beat eggs until thick; add sugar, salt and rum or vodka. Combine flour and baking powder and place on a flat surface.
- Make a well in the center.
- Add butter.
- Blend together, using tips of fingers.
- Build up mixture and pour eggs-sugar liquid into the center.
- Using a fork, start stirring the liquid, adding the flour mixture into it, a little at a time.
- Knead dough until smooth. (Dough tends to be sticky, but do not add additional flour, unless necessary.)
- Turn dough over at first with a pastry scraper.
- Cut dough into 4 parts and roll out paper thin on a lightly floured board.
