Wilted Spinach Salad

  1. Place torn spinach or lettuce in a large bowl; add the sliced green onion.
  2. Sprinkle a generous amount of pepper over the torn greens.
  3. Cut uncooked bacon into small pieces.
  4. In a 12-inch skillet, cook bacon until crisp.
  5. Do not drain off drippings.
  6. Stir in vinegar, lemon juice, sugar and salt.
  7. Remove skillet from heat; add torn spinach or lettuce and green onion.
  8. Toss gently until well coated.
  9. Turn into a serving dish.
  10. Top with the chopped hard-cooked egg; serve immediately.
  11. Makes 6 servings.
