Easy Tomato Soup
- 1 medium sweet onion
- 2 minced garlic cloves
- 2 tablespoons butter
- 2 tablespoons olive oil
- 28 ounces crushed tomatoes
- 5 1/2 cups tomato juice
- 2 tablespoons sugar
- 2 tablespoons chicken base
- 1/2 teaspoon white pepper
- 1 cup red wine
- 2 teaspoons dried basil
- 2 teaspoons parsley flakes
- 12 ounces low fat evaporated milk
- Melt the butter with the olive oil in a medium pot.
- Saute the onion and garlic until the onion is translucent.
- Stir in the crushed tomatoes, tomato juice, sugar, chicken base, white pepper, wine, basil, and parsley.
- Bring the soup to a boil.
- Reduce the heat to low , stir in the evaporated milk., and simmer for 10 minutes.
