Fish And Shellfish Stew
- 1/2 c. cooking oil
- 2 onions, chopped
- 1 tsp. garlic powder
- 8 green onions, sliced
- 1/2 lb. mushrooms, sliced
- 1 large green pepper, sliced
- 2 cans tomatoes
- 1 (15 oz.) can tomato sauce
- 1 pt. oysters, with liquor
- 2 c. red wine
- salt and pepper
- 1/2 tsp. basil
- 1/2 tsp. oregano
- 1 Tbsp. chili powder
- 3 potatoes, sliced
- 3 lb. fish chunks
- 1 lb. crab meat
- 1 lb. shrimp, shelled
- 4 Tbsp. chopped parsley
- Saute the mushrooms, onions and green pepper until the pepper is soft.
- Add the tomatoes, tomato sauce and wine.
- Bring to a simmer and add the garlic powder, spices and potatoes.
- Simmer for about 25 minutes.
- Add the fish chunks and cook about 5 minutes. Add crabmeat, oysters with liquor and shrimp; simmer another 5 minutes or until the shrimp have turned pink.
- Serve sprinkled with chopped parsley.
