Healthier Chocolate-Chip Oatmeal Cookies
- 6 tablespoons unsalted butter
- 1/2 cup dark brown sugar
- 1/4 cup Splenda granular or 1/4 cup white sugar
- 1 1/2 cups rolled oats
- 1/3 cup all-purpose flour
- 1/3 cup whole wheat flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- 1/2 cup chocolate chips
- Put the butter in a small, microwave-safe mixing bowl and heat in the microwave until just melted (about 45 seconds).
- Add the sugar and sucralose to the melted butter and stir until well-combined.
- Beat the egg with the vanilla and add to the butter-sugar mix. Stir until combined.
- In a large mixing bowl, combine the flours, oats, baking soda and salt. Add the liquid mixture and mix well.
- Fold in the chocolate chips.
- Wrap the cookie dough in plastic and chill in the refrigerator for at least 30 minutes. (You can skip this step, but the cookies will be flatter.).
- While the dough is chilling, preheat the oven to 350u0b0 F and lightly grease a cookie sheet or cover it with parchment.
- Remove the dough from the refrigerator. Break off tablespoon-sized pieces, roll them into balls, and place them on the cookie sheet, leaving about 2 inches in-between.
- Bake for 12-15 minutes, until cookies have just set up.
