Pasta With Broccoli, Sausage And Tomatoes(Serves 4 To 6)
- 1 lb. sausage (removed from casing)
- 4 garlic cloves, thickly sliced
- 1 lb. broccoli flowerets, cut into 1/2-inch pieces
- 2 Tbsp. chopped sun-dried tomatoes (not oil packed)
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1/8 tsp. red pepper flakes
- 1/4 c. white wine
- 2 Tbsp. olive oil
- 2 c. chicken broth
- 3 Tbsp. Romano or Parmigiana
- 1 lb. pasta (rigatoni or penne), cook as directed on box
- 1 Tbsp. butter
- Over medium heat, cook sausage for 2 minutes in 2 tablespoons oil, remove sausage from pan. Add broccoli, garlic, tomatoes, salt, pepper and red pepper to same pan on medium heat 3 minutes, then add cooked sausage and wine. Cook another 3 minutes, scraping bottom of pan, stirring; add chicken stock and bring to a boil. Reduce heat, keeping lid ajar; simmer for 30 minutes.
