Matt'S Favorite Orange Bran Muffins
- 5 c. all-purpose flour
- 1 Tbsp. plus 2 tsp. baking soda
- 1 tsp. salt
- 7 c. unprocessed wheat bran (uncooked)
- 2 c. boiling water
- 4 eggs
- 4 c. buttermilk
- 1 large orange, peeled and coarsely chopped
- 1 1/2 c. sugar
- 1 c. butter or margarine, melted
- 1 c. vegetable oil
- 2 c. raisins or chopped dried fruit
- Combine flour, soda and salt in large bowl.
- Make well in center of mixture; set aside.
- Combine wheat bran and boiling water in a large bowl.
- Stir well and set aside.
- Place eggs, buttermilk and chopped orange in a container of an electric blender or a food processor; process until smooth.
- Add buttermilk mixture to bran mixture; stir well.
- Add sugar, butter and oil.
- Stir well and add to bran mixture.
- Add buttermilk mixture/bran mixture.
- Add dried fruit; stir and mix into flour.
- Stir until all dry ingredients are moist.
- Cover batter and store in refrigerator up to 1 month.
