Matt'S Favorite Orange Bran Muffins

  1. Combine flour, soda and salt in large bowl.
  2. Make well in center of mixture; set aside.
  3. Combine wheat bran and boiling water in a large bowl.
  4. Stir well and set aside.
  5. Place eggs, buttermilk and chopped orange in a container of an electric blender or a food processor; process until smooth.
  6. Add buttermilk mixture to bran mixture; stir well.
  7. Add sugar, butter and oil.
  8. Stir well and add to bran mixture.
  9. Add buttermilk mixture/bran mixture.
  10. Add dried fruit; stir and mix into flour.
  11. Stir until all dry ingredients are moist.
  12. Cover batter and store in refrigerator up to 1 month.
