Layered Ranchero Dip
- 1 to 2 cans jalapeno flavored bean dip or refried beans
- 1 c. sour cream
- 2/3 c. mayo or softened cream cheese
- 1 pkg. taco seasoning mix or few drops Tabasco sauce
- 4 medium ripe avocados
- 8 oz. Cheddar cheese, shredded
- 2 Tbsp. lime juice
- 2 c. chopped tomatoes
- 1 tsp. salt
- 1/4 tsp. garlic powder
- chopped green onion to taste
- black olives to taste
- chopped lettuce to taste
- On serving platter, spread bean dip; in small bowl, combine sour cream, mayo or cream cheese and taco seasoning.
- Spread over bean dip.
- Peel, pit and mash avocados; combine with lime juice, salt and garlic.
- Spread over sour cream mixture.
- Sprinkle with cheese, onions, tomatoes, lettuce and olives.
- Serve with tortilla chips.
