Brunch Pie
- 2 cans corned beef hash
- 2 (16 oz.) cans Veg-All mixed vegetables, drained
- 3 Tbsp. margarine
- 6 eggs
- 2 c. shredded Swiss or Mozzarella cheese
- 2 c. shredded Cheddar cheese
- 2 c. Monterey Jack cheese
- 1/2 tsp. dry mustard
- 1 c. evaporated milk
- 1 c. chopped onion
- 1 Tbsp. flour
- 1/8 tsp. garlic powder
- 1/8 tsp. pepper
- mushrooms (optional)
- Grease 9 x 13-inch pan with margarine.
- Combine hash with one beaten egg and press into pan.
- Bake at 375u0b0 for 10 minutes. Saute onion in margarine. Layer cheese, onion and vegetables in the crust.
- Beat together remaining ingredients.
- Pour over cheese and vegetables.
- Bake at 350u0b0 for 30 to 40 minutes until filling is set and golden.
- Remove from oven; let stand 10 minutes before serving.
