Sandwich Spread
- 1 gal. green tomatoes
- 10 red sweet peppers
- 10 green sweet peppers
- 6 medium onions (optional)
- 1/2 c. salt
- 1 qt. water
- 3 c. sugar
- 1 1/2 c. vinegar
- 1 pt. jar mustard
- 6 Tbsp. cornstarch
- 1 qt. jar Miracle Whip salad dressing
- Grind the first 4 ingredients all together. Drain off juice. Add the salt; let set overnight. Add the water and cook 10 minutes on simmer. Drain well and rinse with water to remove salt. Mix the sugar, vinegar and mustard. Stir in vegetables and cook 12 minutes. Then mix the cornstarch with cold water. Add to vegetables and cook 3 to 5 minutes, stirring constantly. Remove from heat and let cool 10 minutes. Add the salad dressing. Stir well. Put in pint jars and seal. Hot water bath for 5 minutes.
