Christmas Cake From Australia
- 1 stick margarine
- 1 c. sugar
- 1/2 (No. 2 1/2) can crushed pineapple, drained
- 3 eggs
- 1 (8 oz.) pkg. dates
- 3 to 4 oz. pkg. candied cherries
- 1/2 tsp. salt
- 1/2 tsp. each cinnamon, cloves, allspice and nutmeg
- 1/2 lb. white raisins
- 7/8 c. buttermilk
- 1 pt. strawberry preserves
- 2 c. flour
- 1 tsp. baking powder
- 1 tsp. soda
- 1 lb. chopped pecans
- Cream the margarine and sugar. Add eggs, one at a time.
- Mix well. Sift dry ingredients together, except for the baking powder. Dissolve soda in buttermilk; add dry ingredients and buttermilk alternately.
- Fold in preserves and pineapple.
- Last, add dates, cherries, raisins and pecans.
- Bake in 4 layers at 350u0b0 for 30 minutes.
- May take a little longer.
- When cold, put together with filling.
