Mexican Meat Loaf
- 1 Tbsp. vegetable oil
- 1 c. chopped onion
- 1 c. red or green peppers
- 2 garlic cloves, minced
- 1 beef bouillon cube or instant beef broth mix
- 15 oz. ground veal, beef or turkey
- 4 oz. Cheddar cheese, shredded
- 3/4 c. bread crumbs
- 1/2 c. tomato sauce
- 1/4 c. plain yogurt
- 2 Tbsp. chopped parsley
- 2 tsp. Worcestershire sauce
- 1 tsp. chili powder
- dash of pepper
- Preheat oven to 375u0b0.
- Heat oil in skillet over medium heat; add onions, peppers, garlic and broth mix.
- Saute until onions are translucent.
- Combine vegetables with all other ingredients and mix thoroughly.
- Place in a loaf pan.
- Bake until brown, about 45 minutes.
