Mexican Meat Loaf

  1. Preheat oven to 375u0b0.
  2. Heat oil in skillet over medium heat; add onions, peppers, garlic and broth mix.
  3. Saute until onions are translucent.
  4. Combine vegetables with all other ingredients and mix thoroughly.
  5. Place in a loaf pan.
  6. Bake until brown, about 45 minutes.
