Beef-Filled Squash

  1. Cut squash in half lengthwise; remove seeds.
  2. Bake, cut side down, in shallow pan at 350u0b0 for 45 minutes or until tender.
  3. Fry diced bacon.
  4. Add beef, onion, 1/2 teaspoon salt and dash of pepper.
  5. Cook until beef is browned.
  6. Pour off excess fat.
  7. Remove squash from shells (reserve shells).
  8. In small mixing bowl, whip squash with 1/2 teaspoon salt; add milk as needed to make mixture fluffy.
  9. Combine with beef mixture.
  10. Return to squash shells.
  11. Top with crushed potato chips.
  12. Continue baking at 350u0b0 for 15 minutes.
  13. Makes 4 servings.
