Beef-Filled Squash
- 2 medium-large acorn squash
- 2 slices bacon, diced
- 1 lb. ground beef
- 1/4 c. chopped onion
- 1 to 2 Tbsp. milk
- 1/4 c. crushed potato chips
- 1/2 tsp. salt
- dash of black pepper
- Cut squash in half lengthwise; remove seeds.
- Bake, cut side down, in shallow pan at 350u0b0 for 45 minutes or until tender.
- Fry diced bacon.
- Add beef, onion, 1/2 teaspoon salt and dash of pepper.
- Cook until beef is browned.
- Pour off excess fat.
- Remove squash from shells (reserve shells).
- In small mixing bowl, whip squash with 1/2 teaspoon salt; add milk as needed to make mixture fluffy.
- Combine with beef mixture.
- Return to squash shells.
- Top with crushed potato chips.
- Continue baking at 350u0b0 for 15 minutes.
- Makes 4 servings.
