Fruit Strudel
- 1 1/2 c. apples, peeled, cored and diced
- 1 1/2 c. pears, peeled, cored and diced
- 1 c. fresh apricots, cored, diced, drained and rinsed
- 1/3 c. seedless raisins
- 6 phyllo sheets
- 1/4 c. brown sugar, packed
- 1 Tbsp. vanilla
- 4 Tbsp. Molly McButter
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- Preheat oven to 350u0b0.
- Spray cookie sheet with nonstick spray. In a medium bowl, combine all ingredients except phyllo sheets. Spread mixture on prepared cookie sheets.
- Bake at 350u0b0 for 20 to 25 minutes until fruit is tender.
- Cool completely.
- Increase oven temperature to 400u0b0.
- Layer three phyllo sheets on top of one another.
- Spoon one-half mixture along the edge of the phyllo. Roll phyllo jelly roll fashion and place on cookie sheet prepared with nonstick spray.
- Spray strudel with spray to prevent drying. Score top of strudel with 7 diagonal cuts.
- Do not cut all the way through.
- Repeat process for second strudel.
- Bake for about 10 minutes.
- Yields 2 strudels, 8 servings.
