Arizona Casserole
- 2 lb. ground meat
- 1/2 c. chopped onions
- garlic to taste
- 3 small cans tomato sauce
- 1/2 tsp. sugar
- 1 small can chopped black olives
- 1 small can chopped green chilies
- 1 large cottage cheese, with 1 egg mixed in
- Monterey Jack cheese and/or Cheddar cheese, grated
- softened corn tortillas, quartered
- chili powder to taste
- Brown and drain the ground meat, garlic and onion.
- Add the tomato sauce, sugar, black olives, green chilies and chili powder; heat through until well blended.
- Layer as follows:
- meat mixture, cottage cheese with eggs, grated cheese and softened tortillas. Continue layers; end with meat and cheese so tortillas won't dry out.
- Bake for 20 to 30 minutes at 350u0b0.
- This recipe makes a large casserole, more than will go in a 9 x 13-inch pan.
- Great for large groups!
