Golden Peanut Butter Bars
- 2 cups all-purpose flour
- 3/4 cup light brown sugar, firmly packed
- 1 egg, beaten
- 1/2 cup unsalted butter, cold (or margarine)
- 1 cup peanuts, chopped (I just pour some in my food processor and chop until fine)
- 1 (14 ounce) can sweetened condensed milk (NOT evaporated milk)
- 1/2 cup peanut butter
- 1 teaspoon vanilla extract
- Preheat oven to 350u0b0F
- Combine flour, brown sugar and egg; cut in butter until crumbly. Stir in peanuts. Reserving 2 cups crumb mixture, press remaining mixture on bottom of 13x9-inch baking pan. Bake 15 minutes or until lightly browned.
- In large bowl, with mixer, beat condensed milk with peanut butter and vanilla. Spread over prepared crust; top with reserved crumb mixture.
- Bake 25 minutes longer or until lightly browned. Cool. Cut into bars. Store leftovers covered at room temperature.
