Banana Pudding(Only 1 Mg Cholesterol Per Serving)
- 1/3 c. firmly packed brown sugar
- 1 1/2 Tbsp. cornstarch
- 1 2/3 c. skim milk
- 1/3 c. frozen egg substitute, thawed
- 1 Tbsp. low-fat margarine
- 1 tsp. vanilla
- 26 vanilla wafers
- 3 medium bananas, sliced
- 1 egg white
- 2 Tbsp. sugar
- Combine brown sugar and cornstarch in a saucepan.
- Gradually add milk.
- Cook, stirring constantly, until mixture comes to a boil.
- Cook 1 minute.
- Stir one-fourth of hot milk into egg.
- Add to remaining hot mixture.
- Cook until thick.
- Stir in margarine and vanilla.
- Cool.
- Put layer of vanilla wafers, then layer of bananas and pour custard over.
- Repeat layer.
- Beat egg whites until stiff.
- Add 2 tablespoons sugar.
- Spread on top.
- Bake at 325u0b0 for 20 minutes or until golden brown.
- Makes 6 servings.
