Easy Braised New Potatoes

  1. Preheat oven to 375.
  2. In large oven-safe skilet, heat oil and butter over med-low heat. Add onion, and cook until very soft, about 15 minute.
  3. Stir in the rosemary, potatoes, and shallots and season with salt and pepper.
  4. Raise heat to med high and cook until potatoes begin to brown, about 10 minute
  5. Remove from heat, and add chicken stock.
  6. Cover skillet and transfer to oven. Cook until potatoes are fork-tender, about 10 minute.
  7. Uncover and cook until liquid is reduced, about 20 minutes, then serve.
