Darlene'S Special Burritos
- 2 medium potatoes, boiled or microwaved whole with skin on)
- 1 lb. ground beef
- 1 medium onion, chopped
- 3 to 5 fresh jalapeno peppers, chopped
- salt and pepper to taste
- 1/4 tsp. garlic powder
- 2 pkg. large flour tortillas (Azteca or Fontova)
- oil for deep frying
- Brown ground beef with seasonings.
- Add onion and jalapenos and simmer until onion is transparent.
- Meanwhile, peel and grate potatoes.
- Add potatoes to meat mixture.
- Mix well and simmer for about 5 minutes.
- Drain well.
- Heat tortillas in oven or microwave for 2 minutes.
- Place several tablespoons of meat mixture in center of tortilla.
- Fold edges up envelope fashion and secure with a wooden toothpick.
- Burritos should be square when folded. Place burrito carefully into hot oil in large skillet until golden brown on both sides and crispy.
- Place on paper towels to drain. Serve hot with salsa!
