Beef Stroganoff
- 1 (1 lb.) lean boneless beef sirloin steak
- vegetable cooking spray
- 2 c. sliced fresh mushrooms
- 1 c. chopped onion
- 1 1/2 Tbsp. reduced calorie margarine
- 1 1/2 Tbsp. all-purpose flour
- 1 c. water
- 1 tsp. beef flavored bouillon granules
- 1/2 c. plain nonfat yogurt
- 1/4 c. low-fat sour cream
- 1/4 c. Burgundy or other dry red wine
- 1/4 tsp. salt
- 3/4 tsp. pepper
- 3 c. cooked medium noodles made without egg yolks, cooked without salt or fat
- Trim fat from steak; cut into thin strips.
- Coat a Dutch oven with cooking spray.
- Place over medium-high heat until hot.
- Add steak, mushrooms and onion; saute 10 minutes or until steak is browned and vegetables are tender.
- Remove from heat; drain and pat dry with paper towels.
