Unstuffed Pepper Soup
- 1 lb ground beef
- 1/2 chopped onion
- 3 bell peppers, any color, cored and seeded and chopped spoon sized
- 14 ounces diced tomatoes (I used diced with green pepper and onion)
- 1 (8 ounce) can tomato sauce
- 1 1/2 cups water
- 1/4 cup balsamic vinegar
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 cup brown sugar
- 1 cup V8 vegetable juice (or 1 small can with water to make it to a cup)
- 1/2 cup Minute Rice
- Brown onion, garlic, pepper pieces and ground beef in skillet.
- Mix all other ingredients (except rice) in pot and bring to a boil.
- Add minute rice to tomato mixture, stir, put on lid, and set aside for 5 minutes.
- Drain meat and pepper mixture in a colander.
- Add to soup pot and simmer for 15 more minutes.
