Buttermilk Cornbread Sticks
- 2 c. yellow cornmeal
- 1 c. all-purpose flour
- 1/4 c. sugar
- 1 Tbsp. baking powder
- 1 tsp. salt
- 1/2 tsp. baking soda
- 2 eggs, lightly beaten
- 2 c. buttermilk
- 6 Tbsp. butter, melted
- Preheat oven to hot (425u0b0).
- Lightly grease cornstick pan. Place in oven to warm while preparing batter.
- Combine cornmeal, flour, sugar, baking powder, salt and baking soda in a large bowl. Add eggs, buttermilk and butter; stir just to moisten.
- Pour batter into each cornstick mold, filling each about 3/4 full. Bake in preheated hot oven (425u0b0) for about 15 minutes or until tops are lightly browned.
- Cool in pan on wire rack for 5 minutes. Using thin metal spatula, carefully remove sticks from pan. Repeat until all batter is used.
- Makes about 28 cornbread sticks.
