Sauerkraut Salad
- 1 can sauerkraut (Bavarian is good also), drained and rinsed and rinsed
- 1 chopped onion
- 1/2 jar pimentos, diced
- 1 green pepper, chopped
- 2 stalks celery, diced fine
- 2 green onions, diced fine
- 1 large head lettuce, sliced thin, then chopped
- 1/4 c. Schilling instant minced onions
- 1/2 c. chopped celery
- 1 green pepper, diced
- 1 pkg. frozen green peas, cooked and cooled immediately in cold water
- 1 pt. Hellmann's mayonnaise (frost top like a cake)
- 2 Tbsp. sugar
- Parmesan cheese
- bacon bits
- Sprinkle top with last three ingredients and cover tightly in a large glass salad bowl so that layers may be seen. Be sure that it is well covered with plastic wrap and well refrigerated. Serves 12.
