Billie'S Red Hot Cucumber Pickles
- 2 gal. large cucumbers, peeled and seeded
- 2 c. lime
- 1 c. white vinegar
- 1 small bottle of red food coloring
- 1 Tbsp. alum (in water)
- water (to cover cucumbers)
- 2 c. white vinegar
- 2 c. water
- 9 oz. pkg. red hot candies
- 9 c. sugar
- Cover cucumbers with water and lime.
- Soak for 24 hours in an enamel dish.
- Drain and rinse until clear.
- Let stand 3 hours in ice water.
- Simmer very slowly for 2 hours.
- Drain and throw away liquid.
- Do not rinse.
- Make syrup by combining 2 cups of white vinegar, 2 cups of water, red-hot candies and sugar.
- Let boil and pour over cucumbers.
- Let stand overnight.
- Drain and reheat syrup.
- Pour over cucumbers.
- On the third morning reheat syrup; pack cucumbers in jars and pour heated syrup over cucumbers to fill.
- Store in dark place as light makes the color change.
