Lakeville Lake Cioppino(From Sorrento, Italy)
- 1 lb. clams
- 1/2 lb. haddock
- 1/2 lb. cod
- 1 lb. large shrimp
- 1 lb. scallops
- 1/4 c. olive oil
- 2 large onions, diced
- 4 cloves garlic, peeled
- 6 large tomatoes, peeled
- 1 c. and 1/2 bottle white wine
- tomato paste
- Italian seasoning
- basil
- bay leaf
- Cut fish into large pieces.
- Scrub clams; remove shells from shrimp.
- Heat oil in 3 or 4-quart casserole with a cover.
- Add onions, garlic and chopped tomatoes.
- Saute 10 minutes.
- Add 1 cup wine and simmer 10 minutes.
- Add fish and 1/2 bottle wine.
- Add Italian seasoning, basil and bay leaf.
- Cover and simmer 45 minutes.
- Fish will break up and thicken soup.
- If too thick, add rest of bottle of wine.
- If too thin, add 1 tablespoon tomato paste.
