Old Fashion Cherry Nut Bread

  1. Grease and line a standard 9" loaf pan with parchment paper and non stick spray. Coursely chop cherries and pecans. Set aside.
  2. Cream butter and sugar in bowl of a stand mixer with the paddle attachment.
  3. Add eggs, vanilla, and sour cream beating until combined. Scrape down sides.
  4. In a separate bowl, whisk together flour, salt and baking powder.
  5. In a liquid measuring cup combine milk and cherry juice.
  6. With mixer on low and starting with flour mixture alternate flour mixture than milk mixture. Mix until just combined.
  7. Stir in chopped cherries and chopped nuts with a spatula making sure to evenly mix through batter.
  8. Pour batter into prepared pan and bake in a 350 degree oven 60 minutes or until a light golden color or a toothpick inserted comes out clean.
  9. Cool in pan for 10 minutes. Remove from pan and place on wire rack. Cool completely before serving.
