String Beans With Sesame Dressing
- 1/2 lb. string beans
- 2 1/2 Tbsp. soy sauce
- 2 1/3 Tbsp. sugar
- 3 1/2 Tbsp. roasted sesame seed
- 2 lb. zucchini, coarsely grated on a hand grater or food processor
- salt to taste
- 4 Tbsp. cooking oil
- 1 Tbsp. lemon juice
- 1 Tbsp. each: chopped fresh parsley and basil, marjoram or thyme
- freshly ground black pepper
- extra chopped parsley and herbs for garnish
- Put grated zucchini in a strainer over a bowl; sprinkle with salt.
- Leave for 1 hour or longer to allow moisture to drain off. Squeeze excess moisture out before cooking; pat with paper towels so zucchini is as dry as possible.
- Heat oil in a heavy pan; cook zucchini with the sugar over moderate heat, stirring until tender, but not too soft.
- This will only take a minute or two.
- Add lemon juice; raise heat a little.
- Sprinkle with herbs; toss well. Spoon into a serving dish.
- Add black pepper; sprinkle with extra parsley and herbs.
- The zucchini can also be mixed with yellow squash ... mmmm.
- Serves 4 to 6.
