String Beans With Sesame Dressing

  1. Put grated zucchini in a strainer over a bowl; sprinkle with salt.
  2. Leave for 1 hour or longer to allow moisture to drain off. Squeeze excess moisture out before cooking; pat with paper towels so zucchini is as dry as possible.
  3. Heat oil in a heavy pan; cook zucchini with the sugar over moderate heat, stirring until tender, but not too soft.
  4. This will only take a minute or two.
  5. Add lemon juice; raise heat a little.
  6. Sprinkle with herbs; toss well. Spoon into a serving dish.
  7. Add black pepper; sprinkle with extra parsley and herbs.
  8. The zucchini can also be mixed with yellow squash ... mmmm.
  9. Serves 4 to 6.
