Skillet Chicken And Rice
- 6 chicken pieces
- 2 cloves garlic
- 4 Tbsp. cooking oil
- 1 Tbsp. margarine
- 1 can tomato soup
- 1 can beef broth
- 1/2 to 1 soup can of water
- 1 c. uncooked white rice
- salt and pepper
- 1 tsp. canola oil (5 mL)
- 1 onion, finely minced
- 2 carrots, grated
- 2 parsnips, grated
- 1 Tbsp. minced garlic (15 mL)
- 1 Tbsp. grated fresh ginger (15 mL)
- 1 1/2 lb. ground turkey (680 g)
- 2 Tbsp. minced cilantro (30 mL)
- 1 Tbsp. light soy sauce (15 mL)
- 1 Tbsp. fish sauce (15 mL)
- 2 Tbsp. minced green onions (30 mL)
- 1/2 tsp. freshly cracked black pepper (2.5 mL)
- 2 eggs
- Heat the oil in a nonstick saut pan.
- Add the onion, carrots, parsnips, garlic and ginger and cook until tender.
- Let cool.
- Mix well with the remaining ingredients and shape into patties.
- If too wet, add flour to shape.
- Grill, broil or saut.
- Serve on buns with the usual condiments.
