Upside-Down Apple Cake

  1. Grease one 9-inch round glass pie plate.
  2. Spread brown sugar over bottom of plate and press down evenly.
  3. Sprinkle with 1 teaspoon cinnamon.
  4. Melt 2 tablespoons of butter and drizzle over sugar.
  5. Arrange apple slices overlapping around edge of pan.
  6. Fill center with remaining slices.
  7. Compact gently with hands.
  8. Sift together flour, baking powder, baking soda, salt and remaining teaspoon cinnamon.
  9. Cream the remaining 1/2 cup butter and granulated sugar until light.
  10. Add egg and beat until fluffy.
  11. Add buttermilk and flour mixture alternately until smooth.
  12. Carefully spread over apple mixture, making sure edges are sealed.
  13. Bake on center rack of oven at 350u0b0 for approximately 60 minutes.
  14. Loosen edges while still warm (not hot) and invert onto serving plate. Serve with whipped cream or ice cream.
  15. Can be reheated in microwave.
  16. Serves 6 to 8.
