Microwave Peanut Brittle
- 2 c. sugar
- 1 c. light corn syrup
- 1/3 c. water
- 1 (16 oz.) pkg. salted Spanish peanuts
- 1 tsp. butter or margarine
- 1 Tbsp. baking soda
- Greasetwo
- 15 1/2 x 2-inch baking sheets.
- Keep warm. Place sugar,
- corn
- syrup
- and
- water
- in a 3 quart casserole. Cook in microwave
- on Full power for 8 to 10 minutes or until softtall stage
- is
- reached.
- Stir
- occasionally.
- Stir
- in peanuts.
- Cook in microwave for 10 to 12 minutes or until hard crack
- stage
- is reached.
- At
- thisttage, when dropped into waterthe
- syrup separates
- into
- threads which are hard and brittle.
- Stirtn butter and baking soda.
- Pour half of candy on
- each sheet, spreading to 1/4-inch thickness.
- Cook.
- Break into pieces.
