Sunshine Salad

• 1 pkg. lemon Jell-O
• 16 large marshmallows
• 1 c. pineapple juice
• 1 c. pineapple chunks
• 2 bananas, sliced
• 1 c. whipped cream
• 1 c. hot water
• 1 Tbsp. lemon juice
• 1 Tbsp. butter
• 1 egg, well beaten
• 2 Tbsp. flour
• 1/2 c. sugar
• 1/2 c. grated mild Cheddar cheese
• 1/3 c. water

1. Dissolve Jell-O in 1 cup hot water; add marshmallows and let cool.
2. Add pineapple, bananas and 1/3 cup water to the Jell-O-marshmallow mixture.
3. Let set.
4. Cook pineapple juice, lemon juice, butter, egg, flour and sugar, stirring constantly, over low heat until thickened.
5. Let cool completely.
6. Beat whipped cream, adding cooled mixture; mix well.
7. Spread on Jell-O which has been set.
8. Spread cheese on top and serve.
