Christmas Cake(Julekake)
- 6 to 7 1/2 c. flour
- 3/4 c. sugar
- 1 1/2 tsp. salt
- 2 tsp. ground cardamon
- 2 envelopes dry yeast
- 1 c. seeded raisins
- 1/2 c. shortening (margarine)
- 2 eggs
- 1 c. seedless raisins
- 3/4 c. citron (6 oz.)
- 2 5/8 c. milk
- Thoroughly mix the dry yeast with 1/3 of the flour and all the other ingredients.
- Heat milk with margarine over low heat until very warm (120u0b0 to 130u0b0).
- Add liquids to dry ingredients.
- Beat 2 minutes at medium speed on electric mixer.
- Add 1/2 cup of flour. Add eggs and beat on high speed 2 minutes.
- Add fruit and stir in additional flour.
- Let rise until doubled in size.
- Shape into 3 round loaves; let rise and then bake at 375u0b0 for 25 to 30 minutes.
