Christmas Cake(Julekake)

  1. Thoroughly mix the dry yeast with 1/3 of the flour and all the other ingredients.
  2. Heat milk with margarine over low heat until very warm (120u0b0 to 130u0b0).
  3. Add liquids to dry ingredients.
  4. Beat 2 minutes at medium speed on electric mixer.
  5. Add 1/2 cup of flour. Add eggs and beat on high speed 2 minutes.
  6. Add fruit and stir in additional flour.
  7. Let rise until doubled in size.
  8. Shape into 3 round loaves; let rise and then bake at 375u0b0 for 25 to 30 minutes.
