Spinach And Dill Rice(From Vegetarian Epicure Ii)

  1. Heat olive oil in skillet and add fresh spinach (or thawed frozen spinach).
  2. Add garlic, salt or soy sauce, pepper dill weed and vinegar.
  3. Cook over medium heat about 10 minutes, stirring often.
  4. Add the cooked rice and toss until well blended.
  5. Cover and leave over low heat for 3 or 4 minutes.
  6. Toss together the 2 cups of cheeses.
  7. Sprinkle over rice mixture when served.
