Spinach And Dill Rice(From Vegetarian Epicure Ii)
- 3 Tbsp. olive oil
- 1 lb. fresh spinach, minced or 1 lb. frozen spinach
- 2 cloves garlic, minced
- salt or soy sauce to taste
- pepper to taste
- 1 tsp. dried dill weed
- 2 Tbsp. wine vinegar
- 3 c. cooked brown rice
- 1 c. finely crumbled Feta cheese
- 1 c. freshly grated Parmesan cheese
- Heat olive oil in skillet and add fresh spinach (or thawed frozen spinach).
- Add garlic, salt or soy sauce, pepper dill weed and vinegar.
- Cook over medium heat about 10 minutes, stirring often.
- Add the cooked rice and toss until well blended.
- Cover and leave over low heat for 3 or 4 minutes.
- Toss together the 2 cups of cheeses.
- Sprinkle over rice mixture when served.
