Cabbage Pie

  1. Roll out pastry and line a 9 inch pie plate and refrigerate. Stir fry cabbage and sliced onion in butter until barely tender. Whiz cottage cheese and scallions in blender or food processor. stir into cabbage mixture along with tarragon.
  2. Salt and pepper to taste.
  3. Distribute half of cabbage in pie shell.
  4. Arrange sliced eggs on top, cover with rest of cabbage.
  5. Cover with top pastry, crimp edges.
  6. Cut 2 or 3 slashes in top and bake at 400 degrees for 15 minutes.
  7. Reduce temperature to 350 degrees and bake 20 to 25 more minutes.
  8. Crust should be lightly browned.
  9. Makes 6 servings.
