Soft Peanut Butter Cookies
- 1/2 cup shortening (or margarine)
- 3/4 cup creamy peanut butter
- 1/3 cup granulated sugar
- 1/3 cup brown sugar, packed (or 1/6 cup packed Splenda brown sugar blend)
- 1 egg
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- granulated sugar
- 1 (9 ounce) bag Hershey chocolate kisses (optional)
- Preheat oven to 375u0b0F.
- In large mixer bowl, beat shortening and peanut butter until well blended.
- Add 1/3 cup granulated sugar and brown sugar, beating until light and fluffy. Add egg, milk & vanilla, and beat well.
- Stir together flour, baking soda and salt. Gradually add to peanut butter mixture until just mixed.
- Shape dough into 1" balls. Roll in granulated sugar & place on ungreased cookie sheet.
- Back 10 to 12 minutes, or until lightly browned.
- Remove from cookie sheet to wire rack. Cool completely.
- Optional: Immediately after removing from oven, place 1 Hershey's Kiss on top of each cookie, pressing down so cookie cracks around edges.
