Lemon Cheese Pie(Makes 9-Inch Pie)
- ready-made graham cracker crust or 1 1/3 c. crushed graham crackers, 1/4 c. softened butter or margarine and 1/4 c. sugar
- 2 (8 oz.) pkg. cream cheese
- 3/4 c. sugar
- 3 eggs, well beaten
- 1 Tbsp. grated lemon peel
- 3 Tbsp. lemon juice
- 1 c. sour cream
- 2 to 3 Tbsp. sugar
- 1/2 tsp. vanilla
- 2 Tbsp. sliced almonds (or more if desired)
- Heat oven to 350u0b0.
- Prepare crust (if needed) and press into pan.
- Soften cream cheese in large bowl.
- Beat in 3/4 cup sugar. Add eggs one at a time, beating until smooth after each one.
- Beat in lemon peel and juice.
- Pour into crust.
- Bake 30 minutes or until center is firm.
- (Do not turn oven off.)
- Remove from oven. Allow to stand 5 minutes.
- During this time, combine sour cream, 1 tablespoon sugar and vanilla.
- Spread over top of pie.
- Sprinkle with nuts.
- Return to oven.
- Bake 2 minutes or until sour cream is set.
- Cool.
- Chill about 4 hours before serving.
